Introduction to Quality Assurance and Quality Control

This course covers the roles and responsibilities of Quality Assurance and Quality Control in developing a Quality System. Participants will go through the background of the roles as well as what is important to understand when implementing Quality Systems. This course is applicable to all personnel in a food processing plant with roles in determining quality: owners, supervisors, quality manager, quality technician, production personnel, sanitation team, plant manager, food safety team, etc.

Skills / Knowledge

  • 1. Understand the foundations of quality management in food manufacturing.
  • 2. Describe the elements of Plan-Do-Check-Act or PDCA as part of a quality management system.
  • 3. Identify the elements of inputs and outputs that can be managed through quality assurance.
  • 4. Interpret a product specification and identify opportunities for quality control.
  • 5. Follow a production workplan, and standard operating procedures.
  • 6. Document quality control observations and measurements accurately.
  • 7. Perform data analyses and predict when quality may be impacted negatively or positively during a process.
  • 8. Communicate effectively with team members with respect to quality assurance and quality control.
